Chef Ryan Rau originally hails from Oregon, where he trained at Le Cordon Bleu College of Culinary Arts and started his journey with Urban Farmer at the brand’s Portland outpost nearly 7 years ago. Today, Rau applies his background in butchery, slow foods and fusion cuisine to Urban Farmer Denver’s unique culinary program, showcasing seasonal, hardworking ingredients from small farms and purveyors. “The community we’ve created with our farmers and purveyors is what sets us apart, and I love the opportunity to explore new ingredients on a seasonal basis,” he says. “Our chef’s tasting menus are designed to educate our guests about the ingredients we source while delighting them with creative preparations and flavors.”
